Great pasta deserves great sauce.
Rustichella d’Abruzzo introduces a new classic Italian pasta sauce: Sugo alla Norma, made with succulent pieces of grilled eggplant, ricotta salata and basil. Quintessential Sicilian pasta dish and the signature dish of Catania, pasta alla Norma is said to have been named after the Italian opera Norma by Vincenzo Bellini.
To make the classic dish, first gently simmer the Sugo alla Norma with a spoonful of Rustichella d’Abruzzo extra virgin olive oil and two spoonfulls of starchy pasta cooking water. Drain the pasta a few seconds before it is al dente and add it to the pan with the sauce, stirring to coat. Serve immediately in warm pasta bowls and top with shreded ricotta salata (use the large side of the grater, as if making carrot salad) or toasted breadcrumbs.
