In the segment, CBS correspondent Seth Doane joins Rolando at Trattoria Cammillo in Florence to learn all about the traditional Italian dish. As Seth notes, while Tortellini in Brodo is typically enjoyed during the holidays, "in 2020, it's welcome in any season."
"If I have to take one dish to a desert island for the rest of my life, this would be it.'"
While making Tortellini in Brodo is quite complicated—so much so that Rolando felt he couldn't appropriately translate it for his cookbook, AUTENTICO—the finished bowl is exquisitely simple and comforting.
"As Leonardo da Vinci said, 'Simplicity is the ultimate art of sophistication,'" said Beramendi.
He talks about the most precious, magical food in the world Aceto Balsamico Tradizionale di Modena DOP. Watch his 2018 interview at Acetaia Leonardi HERE.
