Rolando raves: "Pour over salads of all sorts and colors, from shaved carrots to celery root to delicate greens. Pair with briny IASA Anchovies in Caesar dressing or drizzle over puntarelle with a splash of IASA Colatura and Volpaia White Wine Vinegar. This oil is beyond delicious swirled over rustic soups like minestrone, ribollita and zuppa di lenticchie e farro."

2025 Harvest Notes
Made by the Bertarelli family in Maremma on Tuscany’s southern coast, Castello ColleMassari I.G.P. is one of the finest expressions of extra virgin olive oil, and in particular, Tuscan olive oil. Each year our founder Rolando is lucky to collaborate with ColleMassari to create a blend specially for Manicaretti. The 2025 Harvest is an excellent blend of organic Frantoio and Leccino olives. The exceptional oil presents an elegant and herbacious nose. In the mouth, it is round, complex, and very clean. Flavors of green tea, green almond, and artichoke delight the palate, expertly balanced by just enough bitterness and spiciness. Castello ColleMassari I.G.P. is Tuscan’s history and future in a bottle.
