Lumache (also known as lumachine) means "snails" in Italian. It is a small, ridged, shell-shaped pasta with a pinched end, perfect for trapping sauce. Ideal for thick sauces such as ragù or baked into mac and cheese. Also delicious tossed with a spicy tomato sauce or garlic-infused butter.
Cooking Time: 9-11 minutes.
