The Zuccardi family organically cultivates their olive groves at the foot of the Andes mountains in the historic wine region of Mendoza, Argentina. The olive harvest takes place throughout April and May, before the olives begin blushing from green to violet. To create the Zuccardi Organic Blend, the family evaluates different cultivars every year and blends varying concentrations of each according to the particular year’s harvest characteristics. This way, they are able to achieve a consistent sensory profile that captures the terroir of the land.
2025 Harvest Notes
This oil is a beautiful blend of 45% Arauco, 45% Escarajuelo, and 10% Arbequina. It has an herbaceous, grassy nose with notes of green tomato and green apple. Zuccardi crafts this oil to be friendly on the palate, with the wonderful flavor of dark, leafy greens, a balanced, approachable bitterness, and a peppery watercress finish that tickles the mouth.
Dress a traditional Argentine salad of sliced tomato and watercress. Pour over any kind of grilled fish or charred squid. Drizzle over leafy greens or roasted vegetables.
