Tenuta di Capezzana Organic Extra Virgin Olive Oil
Produced By: Tenuta di Capezzana
in Carmignano, Tuscany
Rolando raves: “Drizzle over fresh sheep’s milk ricotta and burrata. Steam potatoes and in place of butter, whisk in lots of Capezzana olive oil until you achieve the perfect, fluffy texture of mashed potatoes—serve alongside thinly-sliced roast beef. Every year, I look forward to making my Torta di Capezzana with Chestnut Honey (AUTENTICO, pg. 345)."
2025 Harvest Notes
Crafted by the Contini Bonacossi family at an estate that has been producing olive oil since 804 A.D., this organic extra virgin olive oil blends four classic Tuscan olive cultivars: Moraiolo, Frantoio, Pendolino, and Leccino. This elegant oil has inviting aromas of almond and chamomile, followed by a delicate flavor with a touch of pepperiness. This mild-intensity oil elevates dishes without overpowering them, and over the past 30 years, has garnered a devoted chef following.
