Titone D.O.P. Organic Extra Virgin Olive Oil
Produced By: Titone
in Trapani, Sicily
Rolando raves: “It feels sacrilegious to cook with this incredible olive oil—what better finishing touch for your dishes? Drench citrus salad with Titone during winter. Make Bucatini with Pesto alla Trapanese (AUTENTICO, pg. 35) and drizzle over Sicilian Pasta con le Sarde (Pasta with Sardines). This ultra fragrant oil is also outstanding on avocado: slice an avocado in half and fill the cavity with Titone, a sprinkle of freshly squeezed lemon juice, and a pinch of fleur de sel.”
2025 Harvest Notes
We’re thrilled to offer Antonella Titone’s pristine D.O.P. Valli Trapanesi organic oil (Protected Designation of Origin). After pressing each of her estate’s olive cultivars separately and rigorously analyzing the resulting monocultivar oils, Antonella makes a selezione della selezione in crafting her crown jewel. This year's D.O.P. harvest, made from 100% Cerasuola olives, has a beautifully aromatic nose with notes of green tomato and tomato leaf. A symphony of sparkling green flavors dances in the mouth. Its gentle bitterness gives way to a persistent spicy finish. Antonella tended to every detail with obsessive attention, and the result is pure perfection.
