Pasticceria Filippi's Colomba cakes (Colomba di Pasqua) begin with fresh butter, selected flours, free-range eggs, and real Bourbon vanilla beans that are skillfully mixed together to form a richly flavored dough. The dough is leavened with their family's irreplaceable yeast starter which has been carefully nurtured for over 40 years. The cakes are topped with a rich and crunchy icing made from fine "Prima Bari" almonds from Puglia, pearl sugar, and egg whites before being baked in the shape of a dove, symbolizing peace and the coming spring. 

For this special Colomba with Candied Apricot, Pasticceria Filippi wanted to emphasize the sweetness of the traditional Italian Easter cake. To their classic dough, they add velvety pieces of Tonda di Saluzzo apricots from Piemonte which are prized for their sweetness. 

The Filippi family firmly believes that “Nulla e mai troppo dolce nella vita!” (“Nothing is too sweet in life!”).

Ingredients of the icing: sugar, fresh egg whites from free-range hens, almonds, olive oil, rice flour, almond flour, apricot kernel flour.

Produced in a factory that also uses other nuts and soy.
