A product of our imagination, brilliantly executed by Antonino Caravaglio. The tender new shoots of the caper plant are plucked by hand in early April when the plant revives after the cooler winter months. The tender shoots are then carefully packed in salt for 10 days, then carefully put in the jars to marinate.

Ideal to use in topping pizza, in panini, or in pasta dishes instead of capers. Serve as an accompaniment to salumi platters, grilled or boiled meats, or simply with crusty toasts for aperitif. Be as creative as you can be.
