Tomatoes peeled by hand, a typical Lucan specialty, from Masseria Mirogallo. Pomodori Pelati are pantry powerhouses, versatile in their uses. Make anything form a pasta sauce, to a hearty ragu’. The tomatoes retain a hearty texture, enough to withstand a slow braise. Even after such cooking you can still taste their sweetness and bright acidity.

After carefully cultivating seeds from the previous years’ harvest the Belfiore family—owners of Masseria Mirogallo—replant their own heirloom Roma tomato seeds year after year.

When ripe, the tomatoes are hand harvest, carefully cleaned, then peeled in a fascinating show of skill—quickly blanched, then peeled by hand by quick fingers who have decades of muscle memory. The tomatoes are jarred, then briefly pasteurized to just the minimum amount of time, to unsure the natural flavor isn’t cooked out of the sealed jar. They maintain a purity, sitting in nothing but their own juice, no salt or water has been added.
