Chiara and Massimo Maserio, the owners of Cammillo, are very dear friends of mine. We do cooking classes together and eat together, at their restaurant and at home. In fact, the staff and service at Cammillo gives you the feeling of being at home
I love that the overwhelming menu allows me to eat a different thing every time I go there. However, more often than not I eat the incredible dish of Vermicelli alla Bottarga, the pasta oozing butter, and the bottarga so sweet it tastes like candy. Also, Chiara has a grandfathered wood burning grill, so Camillo is one of the few places I eat a Bistecca alla Fiorentina and grilled rabbit. She also makes a delicious Torta di Pere, a pear torte which is mostly fruit, as well as the best tiramisu in town, which she also makes with persimons during the fall.
