All your cooking will benefit from the use of this flavorful extra virgin olive oil. Savor pleasant aromas of olive leaf and sage, profuse bitter notes, and its prominent nutty flavor—evocative of walnuts, hazelnuts, and green almond—ending with a warm spicy finish. Making a tomato sauce? The sweetness of the tomato pairs harmoniously with this olive oil's fresh, bitter aromas.

Keep a bottle of this staple in your pantry for everyday cooking; it will make all of your food taste splendid.

The Vestine hills—located between the foothills of the Apennines and the Adriatic sea—are covered with centuries-old olive orchards. The mild Adriatic breezes keep the temperatures quite warm throughout the year, allowing the olives to grow in a very healthy environment without the use of chemicals or pesticides.

The farmland owned and managed by Gianluigi Peduzzi produces a bountiful quantity of olives, which are milled in a modern community frantoio (olive mill), located a stone's throw from the fields. Gianluigi works together with the farmers and the olive mill to ensure that the olives are fresh and pressed within the same day of their harvest. The oil is then decanted in stainless steel tanks for about a month and filtered before bottling.

Region: Vestine Hills, Pianella, Abruzzo
Olive varietals: 100% Dritta Pianellese

Use this olive oil as Nicolina Peduzzi does: generously.

Nicolina Peduzzi, the matriarch of Rustichella d'Abruzzo, is a master when it comes to making pasta dishes. There is nothing like a bowl of spaghetti with lots of thinly sliced zucchini that have caramelized, almost deep-fried, in abundant Rustichella d'Abruzzo Extra Virgin Olive Oil. The same can be said for a dish of aglio, olio e peperoncino (pasta with garlic, olive oil and red pepper flakes) as well as a basic tomato sauce that shimmers with a thick layer of olive oil.

In the center of the table at Nicolina's home, there is always a bowl of olive oil full of red pepper flakes, which is poured in careful quantities on top of the pasta dish instead of finishing with Parmigiano.
