It might feel sacrilegious to cook with this incredible olive oil. Almost a sin, since it's so good. Use Titone to dress simple preparations of greens or vegetables, along with a few drops of lemon juice and sea salt from Trapani. If you serve pasta in the Sicilian tradition, with anchovies and fennel, drizzle this olive oil on top at the table.

This extra virgin olive oil is pure perfection, well-rounded with many layers of aroma—green grass, tomato leaf and artichoke. The taste is brilliant—decidedly herbaceous, with notes of arugula, artichoke, and green almond punctuated by bright green tomato. Peppery and bitter—screaming of polyphenols—it lingers on your lips to the back of your palate. We cannot overpraise Antonella Titone’s masterful blend. Every detail was tended to with obsessive attention, and the result is an intoxicating delight.

The Titone family’s passion to produce a very high quality extra virgin olive oil stems from generations of scientific approach. Nicola and Antonella know that extra virgin olive oil is essential to a better and healthier life. It is no wonder their immaculate farm mirrors their devotion to one governing mantra: quality or nothing.

Organic farming has many interpretations in many parts of the world. The Titone family, because of their pharmaceutical background, have developed their own methods and standards. Their desire to have a pristine environment to live in drove them to surpass every norm and regulation that is embodied in the organic farming code of the area. These include far reaching moves in pruning, fruit-fly prevention and composting that have set new standards for agriculture as a whole.

The olives are harvested entirely by hand and pressed within hours with a high-tech continuous cycle frantoio (olive mill) producing a very cloudy green emerald oil. After a few weeks of natural decantation in stainless steel tanks, the oil is bottled by hand and released in very limited amounts.

Rolando raves: “Walking through the estate’s sustainable, organic olive groves with Antonella Titone is a revelation. Here, the earth is alive and potent and one can feel how everything is connected. Their own flocks of turkeys and guinea fowl run all about, trimming the herbs and enriching the dynamic soil. Native bees and butterflies excite the air. This joyful aliveness comes through in Titone’s extraordinary oil.  Drink it by the spoonful every single day—it’s medicine, a magical potion!”
