Red Wine Vinegar
Starting with a base red wine of Cabernet Sauvignon, Merlot, and Syrah sourced exclusively from Marqués de Valdueza’s own vineyards, this red wine vinegar is crafted using the traditional Orléans method. In this long, slow process, the wine ferments in oak barrels exposed to oxygen, allowing surface-born cultures to develop naturally. . The result is a vinegar of the highest quality, with a subtlety often lost in accelerated modern methods.
It is then aged for three years in French oak barrels, gaining depth and complexity. Wild fennel gathered on the estate is macerated into the vinegar, adding a characteristic light note of licorice. Lightly filtered before bottling, it shows a brilliant honey-orange color and sparkling clarity, with layered aromas of vanilla, fennel, and licorice, rounded by a touch of almond. On the palate, notes of toasted almond and licorice intensify, finishing with citrus flavor reminiscent of freshly peeled grapefruit.
With bright acidity (9%), this is a vinegar designed to uplift a dish, never to overshadow it—a finishing vinegar with character, ideal for vinaigrettes, local greens, soups, tomato sauces, and fresh fruit.
