Agustí Torelló Mata is famous worldwide for handcrafting superlative, regionally expressive cava (the DO Spanish sparkling wine produced using the méthode champenoise) in his home village of Sant Sadurní d’Anoia, the capital of cava in the heart of the Penedès wine region. The estate winery practices organic cultivation and only grows indigenous grapes that reflect the unique terroir of Penedès.
Agustí Torelló Mata Cava Vinegar Sec is estate-made from his distinctive cava Brut Nature. This is cava in its purest state: made from the holy trinity of traditional cava grape varieties—Macabeu, Parellada, and Xarel-lo—and without any added sugar. The dry sparkling wine is naturally acetified into vinegar and oak barrel-aged for more than 18 months, yielding a smooth, elegant acidic foil with more residual fruit than champagne vinegar. It has a crisp, clean flavor profile with notes of citrus zest, stone fruit (apricot, peach, nectarine), and a bright, effervescent acidity (6%). It is an exceptional tool in the pantry.
