Heather Honey
Heather Honey (Miele di Fiori di Erica) is one of the most distinctive and elusive honeys. Its natural tendency is to crystallize rapidly and finely into a luscious, creamy texture with a warm amber color. On the palate, it reveals a complex personality. It opens with a caramelized sweetness, followed by aromatic, spicy notes reminiscent of licorice and baking spices, giving the overall impression of a comforting baked good.
Heather honey is made from the nectar of Erica arborea, a shrub native to the Mediterranean that grows in limited, specific areas of Tuscany. Flowering in April, it is the first major nectar source of the season, producing small, intensely fragrant white blossoms in the forest undergrowth. This early bloom is what makes the honey so rare: at this time of year, bee colonies are not always large enough to take advantage of it, and weather conditions must be be particularly favorable. Out of respect for the bees’ spring development, heather honey is harvested only in years of true surplus. The result is a precious honey—one that reflects the delicate balance of nature.
