Rinci's Paccasassi Salsa is inspired by the traditional cuisine of Ancona, the capital of the Marche region. Sea fennel, known as "paccasassi" in the Ancona dialect, is an aromatic plant with a succulent texture and unique marine flavor. To craft this versatile salsa verde, Rinci blends pickled sea fennel with lemon juice, extra virgin olive oil, anchovy paste, and seasonings into a thick spread. Savory and tangy, this salsa pairs beautifully with seafood-focused dishes.
