La Valletta created a balanced mix of classic Italian legumes—chickpeas, Colfiorito lentils, peas, and red lentils—all grown on the magnificent Colfiorito plateau in the heart of the Umbria–Marche Apennines. This blend needs no pre-soaking and transforms into a rustic, flavorful soup with just a soffritto and vegetable broth in under an hour. Naturally rich in protein and fiber, Zuppa Colfiorito highlights the simplicity, comfort, and nourishment of traditional Italian cuisine.

A drizzle of excellent extra virgin olive oil is all it needs to shine, but this soup is also wonderful topped with croutons, Danieli Tarallo Grattato, or freshly grated Pecorino. For a heartier main course, stir in browned sausage or pancetta.
