Known as Stringozzi, of Friuli origins, strozzapreti literally means "priest stranglers," in reference to the popular belief regarding the great appetite of priests. This pasta is pleasantly uneven in texture with an unusual bite.
Perfect with Arrabbiata sauce, as well any type of game, duck, or rabbit ragù.
