Creamy Parmesan Polenta

  • 3 cups water
  • 3/4 cup Moretti Lampo (quick cooking) polenta
  • 3/4 to 1 cup grated Parmigiano-Reggiano cheese
  • 1 Tablespoon unsalted butter
  • Salt and pepper

Bring water to a boil and slowly add polenta, whisking constantly. Cook polenta over moderate heat, whisking constantly, 5 minutes. Remove from heat and whisk in cheese, butter, salt and pepper to taste. Serve immediately.

Serves 4

Polenta all'Erbe

(Polenta with Herbs)

  • 1 package Moretti Fioretto Polenta
  • fresh sage, rosemary, bay leaf, thyme and marjoram
  • Fresh cracked pepper
  • 1 Tablespoon unsalted butter per serving
  • 1 Tablespoon Parmigiano-Reggiano cheese per serving

Follow instructions for cooking polenta, but adding 2 more cups than is indicated on the package in order to make a soft polenta, with a consistency of grits. Once the polenta is cooked, add the chopped herbs and pepper and continue to mix. Pour into bowls and make a small well in the middle of the polenta. Put the butter in the well and allow it to melt. Drizzle with the cheese and serve.
